This recipe has been transplanted from my semi-abandoned recipe blog because I thought on my regular blog would also be a great place to have easy recipes with minimal prep for those days where self care is an epic struggle on its own, let alone eating something nutritious.
This is a really basic recipe for a quick hot snack with minimal prep. I first made this as a quick lunch on a Sunday, my husband having left that morning to fly to LA for work.
Prep: 10 minutes to wash potatoes, chop stuff and toss together
Cook: 15-20 minutes in the oven at 180-200 degrees C
Total time start to finish: 25-30 minutes, depending on how confident/able you are when it comes to chopping the veg. I find it takes a little longer on bad joint days, when my wrists are sore, because I want to take care with my chopping and not add my fingers to the ingredients!
You only need eight ingredients:
Potato (I think I used King Edward potatoes) – I washed two, when I started out, but I only ended up using the big one
Red onion – one
Chorizo – as much as you want, really
Salt – to taste
Pepper – to taste
Paprika – to taste
Oil (I use leftover oil from a jar of sundried tomatoes because it’s bloody delicious) – to coat all the ingredients
Feta cheese (pretty optional, I just added it at the last minute) – as much as you want
All you need to do is chop everything up (except the feta – that goes on last), coat with oil, salt, pepper and paprika then toss in the oven at 180-200 degrees Celsius for about 15-20 minutes. When it comes out, scoop it into a bowl or onto a plate then crumble some feta over it if you want. That’s literally it!
I had this with a couple of easy peal oranges for something sweet afterwards, and some Earl Grey tea. It was easy to make and tasted great – but that said, the fact that I’ve taken the time to eat anything is good enough for me!
